We are happy that On The Grind has joined the ranks and

soon they will be selling beans in addition to their specialty drinks.

Sometimes vendors change location, so if you don't like surprises,

Last year that tradition was made even better when local business owners donated food and time to serve free breakfast for the masses. We will continue this fun tradition to benefit your community and 2 valuable organizations; the Comal County Fair Scholarship Fund and the Sally M Kingsbury Sarcoma Research Foundation. Cash and credit card donations will be accepted for these 2 causes on site. Bring your donation this year to support them and to enjoy a delicious breakfast donated by locally owned restaurants. Plan to eat with us that morning. In the interest of keeping Downtown tidy, we will not allow food to leave event grounds, but don’t worry! We will have live music. Monte Good’s Honky Tonk trio will entertain us and Frost Bank is sponsoring chuck wagon biscuits and peach cobbler. It will be a hoot-n-a-holler, y’all!

Comal County Fair Parade Day.

On this day, New Braunfelsers from all corners of the county come Downtown bright and early

for one of our long standing traditions.  Now-a-days, you can come to the farmers market

on that morning for live music and a free breakfast provided by your local restaurants.

Bring a donation to benefit Comal County Fair Scholarship Fund and

Sally M. Kingsbury Sarcoma Research Foundation.

This community event will be good for everyone.

I did!!  It was fantastic!!

I think I will change the recipe a little the next time I make it, though.

Instead of using slices of apple, I will grate the apple and the cheese and

mix the ingredients to make a filling that can be spooned onto the pastry.

Also - be generous with the cajeta.  It is soooo good.

Modify the recipe - and substitute strawberries and High Street Chocolate!

This week, visit the River Whey Creamery booth to get

ingredients for this easy, and delicious treat!

Prep Time: 10 Minutes

Bake Time:  15 Minutes

Yield:  3 Tarts


  1. Preheat oven to 400 degrees F.
  2. Place a sheet of parchment paper on a baking sheet, dust it lightly with flour and set aside.
  3. Place three of the puff pastry rectangles onto the prepared baking sheet.
  4. Place one teaspoon full of the cajeta, one ounce of the cheese, and one or two slices of the green apple in the center of each of the pastry rectangles; leave at least a ½ inch border around the edge.
  5. Dip your finger in water and moisten the ½ inch edge around the pastry rectangles.
  6. Place the three remaining puff pastry rectangles on top of the filled pastry and, pressing with a fork, crimp the edges closed on all four sides.
  7. Place the sheet tray with the pastry into the preheated oven for 10 to 15 minutes until the pastry is puffed and golden-brown-and-delicious! (G-B-D)
  8. Remove the sheet from the oven and let the pastry cool for 5 minutes.

 Serve warm, by itself, drizzled with chocolate sauce,

more Cajeta, or with vanilla ice cream!


Blackberries will be out of season soon.

Get them while you can and make this blackberry sherbet!

Puree the blackberries. Pour puree into a sieve and strain out the seeds. This will take a while, just keep pushing the mixture around with a spoon and pushing down on the mixture to extract the juice–yields roughly 1 3/4 cup blackberry juice. Add the sugar, salt, and lemon juice, and pour into your ice cream maker. Process according to your ice cream maker’s instructions, until the mixture is relatively firm. Meanwhile, beat the cream to stiff peaks. Fold the whipped cream into the processed blackberry mixture. Spoon into a freezer-proof container and freeze until sherbet is set, preferably overnight.
